The “Frosted Orange” from Atlanta’s Varsity drive-in is worth stopping for, if your Spring Break road trip takes you through that neck of the woods.
It’s a dreamy vanilla and orange-juice based shake-smoothie-slushie drink, often imitated. (Think Orange Julius.) My friend Melynda makes a version using Fanta orange, vanilla ice cream and shaved ice.
This imitation is surely much healthier, using tofu and vanilla soy milk as a substitute for vanilla ice cream. (Who knew that trick?) This recipe makes four 100-calorie servings, each with 4 grams of protein and 1 gram of fat. And, hey — it’s vegan!
1 1/2 cups fresh orange juice
1 cup chilled vanilla soy milk
1/3 cup chilled silken or soft tofu
1/2 teaspoon vanilla extract
1 cup ice cubes
Combine ingredients in blender and process until smooth and frothy, about 30 seconds. If desired, add more ice.
