Peanut Butter Balls

There’s a subject that keeps popping up on the Facebook page for the elementary school I attended in Georgia.

In between memories of pony rides at the Halloween carnival and debates over who held the Field Day record for fastest 50-yard dash, there are lots of entries about the Cafetorium.

We all remember that the Cafetorium was the combo cafeteria and auditorium (clever, eh?). But what everyone wants to know is this: Who has the recipe for the Cafetorium’s peanut butter bars?

There probably could be a separate Facebook page dedicated to the musings about Skyland Elementary’s peanut butter bars, which I can still taste after all these years. A few people have posted what they think might be the recipe, or at least something close. I tried a few of them, and the results didn’t match up to my memory of those yummy bars.

Here’s a concoction that’s been developed in the quest for the mythical peanut butter bar. The ones at school didn’t have any chocolate, coconut or sunflower seeds — it was the ’70s, and times were tough! Now, however, we can sometimes splurge and add a few extra-tasty ingredients. In reverence to memory, these are not bars, but balls. Hence the catchy name:

Peanut Butter Balls

1 cup peanut butter

1 cup powdered nonfat milk

½ cup honey

¾ cup uncooked oatmeal

Optional additional ingredients:

½ cup mini chocolate chips

1 cup sunflower seeds

½ cup shredded coconut

Put peanut butter, dry milk and honey in saucepan on low heat. Stir thoroughly until combined. Remove from stovetop, and stir in oats. If desired, stir in chocolate chips and/or sunflower seeds. Shape into 1-inch balls and roll in coconut if you choose. Place on plate or cookie sheet, cover and refrigerate until firm.
